My daughter is the same way and she is almost 2. Everyone I have talked to tells me the most important thing to remember is you need to make sure you offer these foods at every meal and eventually they will eat(hopefully). Also make sure her snacks are healthy. Another thing you can do is hide the veggies in her other foods. Chop them finely and add them to stuff like spag or mac and ch. What kinds of veggies have you tried. They usually love peas first and carrots, then green beans and corn. Try those, try fruits such as blueberries, strawberries. My son is 1 year and not a fan of meats yet either, he likes some chicken and ham, but very little and with flavor.
Make sure the noodles are whole wheat. Whole grain foods are #1 on the food pyramid. Try fruit, yogurt and cheese.
Try giving him sauce to dip his chicken or hamburger in. My daughter did the same thing til she was almost 15 months. I would put ONLY meat and veggies on her plate and give her some ketchup and ranch and let her choose how to eat it. Start off with chicken or pork- they should love being able to dip it by herself! My daughter did the same thing and in fact still has moments. I may just be an over relaxed mom but I don't stress it. I have always heard that when they are ready to eat they will. Just keep offering them and eventually they will eat. I gave my daughter vitamins to help supplement and she has turned out just fine so far!!
Don't worry to much, kids can be real picky. (experienced on that one.)
Just make sure you always offer them a good variety at every meal. Eventually they will try other things and like them.

Oh I totally know what you are going through. Trust me, it is a phase (maybe a long one) My son is 20 mos old now and still is a very picky eater but there are certain things that he will eat (they would obviously differ than a 11 month old's diet) Just hang in there and give him what he will eat. I always think that eating something is better than nothing. You could always ask his pediatrician, though they will probably tell you that it is a phase. Is he teething?? I know that when my son is teething, he will hardly eat a thing.
